HOW I SNEAK VEGGIES INTO MY KIDS (and hubster's) PLATE!

Okay. If you follow me for even a wee bit, you know I love a good green smoothie... loaded with healthy fats + dark berries. Majority of the time, I am blessed that our 5yr old twins (aka. the Gillies) enjoy my love for a good green smoothie as well. I know. I know. I am blessed.

However. Every once in a while the Gillies get a wee bit sassy which they inherited primarily from their daddy-o… and they do not want to have a green smoothie.

{ gasp of horror }

Right? Anywho. If you need a break from dumping kale or spinach in a smoothie... let me share with you this tidbit I stumbled upon from a friend (ahem, Cin I'm talking to you).

CAULIFLOWER.

Yes, sweet love. You read that right... cauliflower and I add it in their smoothie! Seriously, what can this veggie (which I would usually avoid) NOT do... first a cheesy sticks, then a pizza crust and now a veggie source in a smoothie.


Here’s the details on the recipe…

GROCERIES:

  • cup of cauliflower florets or even unflavored cauliflower rice

  • cup of frozen blueberries (you know i love them for brain health)

  • cup of unsweetened almond milk

  • 1/2 frozen banana

  • 1 tbsp of almond butter

  • 1 scoop of vanilla protein powder

 
NOW WHAT?

  1. BLEND 'EM!


Now.  I'll be real with you… if you want to add some leafy greens to the mix, no worries! Save yourself time + money by simply purchasing FROZEN SPINACH. You tend NOT to waste it because it doesn’t spoil as fast as FRESH… plus, you don’t need to use ICE!

Okay. That’s all the goodness I have for today! I would absolutely LOVE to hear of any way YOU sneak veggies in your kids' menu? Because if I’m being real… some days I feel like our Gillies give me whiplash with their likes/dislikes. “No, I don’t like bananas!” Knowing good well, she consumed 2 full bananas the day before! Am I right?
